Spinach Salad with Lemon Dijon Dressing

Spinach salad is one of my favorites, especially when tossed in a lemon Dijon dressing! The tang of the lemon and Dijon goes well with the rest of the ingredients. I kept the salad simple with only adding tomatoes, avocado, kalamata olives and cheese (and cheese works) Dressing: Lemon juice of 1/2 a lemon 1/2 teaspoon Dijon mustard 2 tablespoons Olive Oil Salt & Pepper – Mix the lemon juice and Dijon together, the add olive oil, salt & pepper. Enjoy!
